Slow-cooker Vegetable Stew

When my mum came to visit we decided to make something in the slow cooker, and she decided it should be stew. So we raided my cupboards, stocked up on a few things and flung a bunch of ingredients into the slow cooker.

It also included red pepper and Quorn pieces, and possibly other things too. We fried it up with an onion and some garlic.

The stew part came from a chicken casserole packet mix which we examined carefully and concluded didn't contain any actual chicken. In it went, along with a large amount of water - I just poured in as much as I thought it would need, plus a bit more to be on the safe side. Then we set it for four hours and went off to a concert.

And when we got back...
A late-night stewy snack was ready to be eaten
